Larang in Cebu: Where to Eat the Fish Soup, Prices and Esmen’s Bib Gourmand
Sour, spicy, built on ginger and tomatoes, and cooked in a kawa wide enough to feed a street. Cebu has an entire category of eatery named after this one dish, and the version most Cebuanos actually eat contradicts the word’s own definition.
Larang is the sour, spicy Cebu fish stew of tomato, chili and black beans that the city eats at every hour, and the place to have it is Pasil, near the fish market. Esmen, the old stand on F. Rallos Street, earned a Michelin Bib Gourmand in 2026 and opens at 5 AM. Expect ₱120 to ₱200 a bowl, plastic stools and sweat.

What goes in the pot
Tap a tab.
Tomatoes, garlic and red onion cook down in a wide wok until the oil turns the color of the fruit. Fermented black beans add salt and depth.
Kamias (bilimbi), unripe tamarind or green mango for the sour; long chilies dropped in whole for slow heat.
Porcupinefish (tagotongan) is the Cebu City standard; parrotfish and moray eel are others. A long sour simmer is what bony reef fish are for.
Esmen on F. Rallos Street in Pasil, a 2026 Michelin Bib Gourmand, opens 5 AM, cash only, wood fire. Pasil larangans charge about ₱120 to ₱180; Kuya Simo’s in Labangon ₱130 to ₱200 (March 2026). For eel, Entoy’s in Cordova, 6 AM to 6 PM.
The word means to stew with coconut milk, and some Pasil kitchens still use it; others serve a clear broth. Ask before you sit down if it matters.
What larang is
A sour, spicy fish stew cooked to order in a wok: fish, garlic, red onion, tomatoes, fermented black beans and chili, soured with green mango, bilimbi or tamarind. The name comes from a Cebuano verb for stewing with coconut milk, and some old Pasil kitchens still cook it that way; the sidewalk versions by the fish market are usually made without. It is eaten for breakfast as often as dinner, and the Pasil cooks start before dawn, when the fish comes off the wharf.
