Esmen is three wide woks, set side by side over a single bed of wood coals behind a corrugated iron screen, and a counter where the bowls go out as fast as they are ladled. It sits on F. Rallos Street in Pasil, a short walk from the fish market that feeds it. The name is the founders run together: Esing and Menie Garcia. Their children still run it.

It is also one of seven Bib Gourmand restaurants in Cebu in the MICHELIN Guide, a title it first got in the guide’s opening Philippine edition in October 2025 and kept in the 2027 selection. The plaque hangs above the woks. Nothing else about the stand has changed to match it.

What to order at Esmen

Linarang na tagotongan, porcupinefish in a hot, sour broth, is the house signature and the bowl most people come for. It was ₱120 in early 2026, and it sells out most days. Linarang na mamsa, trevally in the same broth, was also ₱120. A third pot carries whatever the market had that morning, as linarang or as tinola, so ask what is in it before you sit down.

Sides move with the market: grilled pork, chorizo, lumpia, salted egg, and grilled fish priced by its size. The pot no longer takes sea turtle, shark or stingray, which it once did. That stopped when the law did.

Wood, not gas

All three woks sit over one bed of wood coals behind a corrugated iron screen. The family credits the wood for the flavor of the stew.

Before noon

Two sets of hours are in circulation: an older 5 AM to 10 PM and a 2026 report of 6 AM to 2 PM. At 10:46 AM on 5 November all three pots were full. Go in the morning and call 0927 302 5936 before a late trip.

What the linarang looks like here

Most photographs of Cebu larang show a red, tomato-heavy stew. At Esmen on the morning of 5 November 2026 the broth in all three woks was pale and cloudy, thick with greens and pale stalks, with pieces of fish riding low in it. It is the same family of dish, sour and peppery, cooked to a different color. For the dish itself and the other places in the city that cook it, the larang guide covers the rest of Pasil and beyond.

The cooking is wood fire, start to finish. The family credits the wood for the flavor of the stew, and it explains the heat that hits you at the counter: the woks are not behind glass and the coals sit right beside the counter.

Esmen hours, and why to go early

Go before noon. Two sets of hours are in circulation for Esmen. The older listing says 5 AM to 10 PM. A 2026 report puts it at 6 AM to 2 PM. At 10:46 AM on a Thursday in November all three pots were full and the counter was busy, so the morning works either way. For anything after lunch, call first on 0927 302 5936.

Bring cash. A carinderia counter on a Pasil street does not run on cards, and the bowls are cheap enough that small bills matter.

How to get to Esmen in Pasil

Esmen is at 10 F. Rallos Street, Barangay Pasil, Cebu City, at 10.2925° N, 123.8944° E, read off the frames on this page. Pasil sits on the edge of the old downtown, close to the Carbon Market, and jeepneys run past it; the jeepney guide has the routes. A taxi or Grab pinned to Esmen Carinderia is the easy option from uptown.

F. Rallos is a working market street, so a jeepney, taxi or motorbike is easier than hunting for parking.

The annoying parts

It is hot. Wood fire, open front, Pasil in the late morning. The tagotongan does not last the day. Seating is the stools and tables under the awning, shared with whoever is already there. And the street outside is a working street, with motorbikes and market traffic moving past the tables.

Where Esmen sits in Cebu’s Michelin list

Cebu’s 2027 selection has 23 restaurants and no stars. Seven hold a Bib Gourmand, and Esmen is the one cooked over a street-side wood fire. The full list is in every Cebu restaurant in the Michelin Guide 2027. For two more local kitchens on it, see ATO-AH and Kokeek’s Manokan. Pair a morning bowl at Esmen with tuslob buwa in Pasil and that is the neighborhood eaten.
