The wall at Hosaku looks like it was cut out of a cliff and carried in. Rough grey stone, uneven, lit from below by a strip that throws the texture into relief. Against it sits a boulder the size of a person, a low chest in dark timber, and one dried arrangement in a heavy jar. The stools are cross sections of tree. Nothing in the room is trying to look new.

Then they hand you the menu and it is a wooden leaf, split down the middle, the two halves opening on a hinge. At that point you understand the whole design brief. This is a room built around the idea that imperfect and weathered is the point, and it is the most committed version of that idea I have eaten in on this island.

Where it is

This is the Banilad High Street branch, off Gov. M. Cuenco Avenue in Cebu City, and it is the main one. It shares the development with a run of other restaurants, which makes parking a solved problem for once. There is a newer branch at Baseline Center on Juana Osmeña Street, but the room described here is this one.

The sign is set into a dark recess above the entrance in warm backlit capitals, and the frontage is glass from floor to ceiling, so you can see the room before you commit to it. Do look before you walk in. The room is the reason to choose this branch.

The trays are the format

Hosaku trades as Hosaku Trays, and the tray is not packaging. It is how the kitchen thinks.

What lands is a set of small vessels rather than one plate. Baked cups in a bamboo shell, three of them across a board: one topped with torched mayonnaise and a wasabi dot, one with shredded crab and pickled ginger, one with a chilli-orange scatter and spring onion. Beside them a long roll on a bamboo mat, thirty centimetres of it, sauce piped down its length and torched, black sesame across the top, a mound of pickled ginger at one end.

The two oval boats are the ones I would order again. Baked rice bases about the length of a hand, one finished with orange roe scattered over torched mayonnaise, one with a fried egg laid whole across the top and the yolk still loose. You break the yolk into the rice with the back of the spoon. It is not subtle and it does not want to be.

How to order here

Take one long roll and one set of baked cups, then stop and look. Everything here is richer than it appears in a photograph. Torched mayonnaise on rice is filling in a way that sneaks up on a table, and the second round should be ordered after the first one has landed rather than with it.

Split the baked boats. One of each between two people beats one each, because the egg version and the roe version are doing opposite things and you want the comparison.

Order the baked salmon. It is the best thing to come off these trays and the one dish I would name if a friend asked for a single order.

Ask for a table against the stone. Half this room is a corridor of ordinary chairs. The other half is the wall you came for.

Getting there

Where. Banilad High Street, Gov. M. Cuenco Avenue, Cebu City. It is in the same development as Wu Yang Cantonese Cuisine, close enough that you can walk from one to the other in under a minute.

Hours. Local food pages covering the Banilad branch through 2025 have listed Monday to Saturday 11:00 AM to 10:00 PM and Sunday 3:00 PM to 10:00 PM. That is a secondhand figure rather than one off a printed board, so treat the Sunday afternoon opening in particular as something to confirm before you drive over.
